These Nutella bars are soft and gooey. Made with Rice Krispies or any other crispy rice cereal, they are easy to make and ready in minutes!
One key to keeping these bars from becoming hard is to make sure the cooking heat is not too high. If too hot, the marshmallows harden, making the bars hard to cut and eat.
Also, this recipe calls for less cereal than other recipes which makes a good ratio of cereal to marshmallows.
If you love Nutella, go ahead and add a little more than the recipe lists because that is one ingredient that doesn’t seem to alter the recipe in a negative way. Enjoy!

- Use the extra butter to coat the bottom and sides of the 9 x 13-inch pan. Set aside.
- In a large pot melt the butter on low. Before the butter is completely melted, add the marshmallows. Stir until the marshmallows are melting. Turn off the heat. Continue to stir until the marshmallows are completely melted. Add the vanilla and salt and stir.
- Add the Nutella and stir until thoroughly mixed. Add the cereal and stir until it is coated with the Nutella mixture.
- Place the mixture into the buttered pan. Place a sheet of waxed or parchment paper over top and press the cereal mixture until it is evenly spread out in the pan. Cut into squares or use a cookie cutter to cut shapes. If using a cookie cutter, press together any leftover mixture and repeat cutting shapes until all of the cereal mixture is cut.
Troubleshooting
The most common complaint with any crispy bars is that they turn out too hard. This usually happens because the heat was too high when melting the butter and marshmallows. Be sure to use low heat and remove the mixture (from the heat) before all the marshmallows are melted. Then stir until all the marshmallows are melted.
Substitution
You may substitute large marshmallows for miniature marshmallows. Use the same amount of ounces listed in the recipe. You can also cut them into two pieces to make them melt faster.
